Instructions

  1. Preheat oven to 325Β°F (160Β°C). Line a rimmed baking sheet with parchment paper or a silicone mat.
  2. In a small bowl, combine cinnamon, smoked paprika, cumin, cayenne, salt, and black pepper. Mix thoroughly.
  3. In a large mixing bowl, whisk the egg white until frothy and slightly opaque (about 30 seconds).
  4. Add maple syrup and olive oil to the egg white, whisk until combined.
  5. Add mixed nuts to the bowl and stir well to coat each nut with the sticky mixture.
  6. Sprinkle in the spice blend and toss again so every nut is evenly coated.
  7. Spread the coated nuts onto the lined baking sheet in a single, even layer.
  8. Bake for 20-25 minutes, stirring halfway through to prevent burning and ensure even browning.
  9. Check for doneness: nuts should be fragrant, golden brown, and dry to the touch. If still sticky, bake in 5-minute increments.
  10. Remove from oven and let nuts cool completely on the baking sheet.
  11. Once cooled, toss in dried cranberries or chopped rosemary if using. Stir gently.
  12. Transfer to an airtight container for storage. Nuts keep up to 2 weeks at room temperature.

Notes
