These buttery soft pretzel bites are the ultimate party snack—chewy on the outside, soft on the inside, and perfect for dipping. Quick to make with simple pantry ingredients, they’re a crowd-pleaser for gatherings, game nights, or cozy snacking.
Ingredients
- 2 1/4 teaspoons active dry yeast (1 standard packet)
- 1 1/2 cups warm water (about 110°F)
- 1 tablespoon granulated sugar
- 4 cups all-purpose flour (500g)
- 1 1/2 teaspoons fine sea salt
- 2 tablespoons unsalted butter, melted
- 8 cups water (for boiling)
- 1/4 cup baking soda
- 2 tablespoons unsalted butter, melted (for brushing)
- Coarse pretzel salt or flaky sea salt (for sprinkling)
Instructions
- In a large mixing bowl, combine warm water and sugar. Sprinkle in the yeast and let sit for 5 minutes until frothy.
- Add flour, salt, and melted butter to the yeast mixture. Stir until a shaggy dough forms. Knead for about 5 minutes until smooth and elastic.
- Cover the bowl with a towel and let the dough rest for 10 minutes.
- Turn dough onto a lightly floured surface. Divide into 4 pieces. Roll each into a rope about 18 inches long and 1 inch thick. Cut into 1-inch bites.
- In a large pot, bring water and baking soda to a boil. Reduce heat to medium.
- Working in batches, drop pretzel bites into the baking soda bath for 30 seconds. Remove with a slotted spoon and drain.
- Place boiled bites on a parchment-lined baking sheet. Brush with melted butter and sprinkle with coarse salt.
- Bake in a preheated oven at 425°F for 12-15 minutes until golden brown and puffed. Rotate pan halfway through.
- Brush baked bites again with melted butter. Let cool slightly and serve warm with your favorite dips.
Notes
For gluten-free, use a 1:1 gluten-free flour blend. Dairy-free? Substitute plant-based butter. For sweet bites, toss baked bites in cinnamon sugar. Air fryer method: cook at 370°F for 8-10 minutes. Store leftovers in an airtight container for up to 2 days or freeze for longer storage.
