  • 2 1/4 teaspoons active dry yeast (1 standard packet)
  • 1 1/2 cups warm water (about 110°F)
  • 1 tablespoon granulated sugar
  • 4 cups all-purpose flour (500g)
  • 1 1/2 teaspoons fine sea salt
  • 2 tablespoons unsalted butter, melted
  • 8 cups water (for boiling)
  • 1/4 cup baking soda
  • 2 tablespoons unsalted butter, melted (for brushing)
  • Coarse pretzel salt or flaky sea salt (for sprinkling)

Instructions

  1. In a large mixing bowl, combine warm water and sugar. Sprinkle in the yeast and let sit for 5 minutes until frothy.
  2. Add flour, salt, and melted butter to the yeast mixture. Stir until a shaggy dough forms. Knead for about 5 minutes until smooth and elastic.
  3. Cover the bowl with a towel and let the dough rest for 10 minutes.
  4. Turn dough onto a lightly floured surface. Divide into 4 pieces. Roll each into a rope about 18 inches long and 1 inch thick. Cut into 1-inch bites.
  5. In a large pot, bring water and baking soda to a boil. Reduce heat to medium.
  6. Working in batches, drop pretzel bites into the baking soda bath for 30 seconds. Remove with a slotted spoon and drain.
  7. Place boiled bites on a parchment-lined baking sheet. Brush with melted butter and sprinkle with coarse salt.
  8. Bake in a preheated oven at 425°F for 12-15 minutes until golden brown and puffed. Rotate pan halfway through.
  9. Brush baked bites again with melted butter. Let cool slightly and serve warm with your favorite dips.

Notes

For gluten-free, use a 1:1 gluten-free flour blend. Dairy-free? Substitute plant-based butter. For sweet bites, toss baked bites in cinnamon sugar. Air fryer method: cook at 370°F for 8-10 minutes. Store leftovers in an airtight container for up to 2 days or freeze for longer storage.
