Description

A simple, delicious, and protein-packed flatbread made with cottage cheese that can be transformed into pizza or enjoyed as a loaf.


Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • 1/2 cup flour (or oat flour for gluten-free)
  • 1/2 teaspoon salt
  • Optional: herbs, chili flakes or garlic for seasoning
  • Olive oil for brushing (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix cottage cheese, eggs, flour, and salt until combined.
  3. Spread the batter onto a lined baking sheet.
  4. Bake for about 20 minutes, or until golden on the edges.
  5. For pizza, spread sauce and toppings on the baked flatbread and return to the oven until the cheese is bubbly.
  6. For flourless bread, blend ingredients until smooth, pour into a loaf pan, and bake for 35-40 minutes.

Notes

This flatbread can be customized with various toppings and herbs. It can also be frozen for later use.
