- 1 cup cottage cheese
- 2 large eggs
- 1/2 cup flour (or oat flour for gluten-free)
- 1/2 teaspoon salt
- Optional: herbs, chili flakes or garlic for seasoning
- Olive oil for brushing (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix cottage cheese, eggs, flour, and salt until combined.
- Spread the batter onto a lined baking sheet.
- Bake for about 20 minutes, or until golden on the edges.
- For pizza, spread sauce and toppings on the baked flatbread and return to the oven until the cheese is bubbly.
- For flourless bread, blend ingredients until smooth, pour into a loaf pan, and bake for 35-40 minutes.
Notes
This flatbread can be customized with various toppings and herbs. It can also be frozen for later use.
