French Onion Ground Beef and Rice Casserole

Description

A hearty and comforting casserole made with ground beef, caramelized onions, and rice, topped with gooey cheese.


Ingredients

  • 2 medium yellow onions
  • 1 lb ground beef
  • 1 cup uncooked white or brown rice
  • 2 cups beef broth
  • 1 cup shredded cheese (Swiss or mozzarella)
  • 1 tbsp Worcestershire sauce
  • Salt to taste
  • Black pepper to taste
  • 1 clove garlic, minced
  • Butter for caramelizing onions
  • Dried thyme (optional)

Instructions

  1. Slice the onions thinly and cook them in a skillet with melted butter for about 20–30 minutes until caramelized.
  2. Set the onions aside and brown the ground beef in the same skillet, seasoning it with salt and pepper.
  3. In a large mixing bowl, combine the ground beef, caramelized onions, uncooked rice, beef broth, shredded cheese, Worcestershire sauce, and black pepper. Mix well.
  4. Pour the mixture into a greased casserole dish and cover with foil.
  5. Bake in a preheated oven until the rice is tender, about 45 minutes. Remove the foil, sprinkle more cheese on top, and bake until golden and bubbly.

Notes

If the rice isn’t cooked fully, add a splash of broth and continue baking for 10 more minutes. Use sharp cheese for more flavor.
