- 1 cup brown sugar
- 1 cup unsalted butter, softened
- 1 teaspoon baking soda
- 1 pinch salt
- 2 eggs
- 1 tablespoon vanilla extract
- 8 oz cream cheese, softened
- Salted caramel sauce
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened unsalted butter and brown sugar until light and fluffy (about 3-4 minutes).
- Add the eggs, one at a time, mixing well after each addition, followed by the vanilla extract.
- In another bowl, whisk together the all-purpose flour, baking soda, and a pinch of salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the softened cream cheese until you have a smooth batter.
- Using a cookie scoop, drop tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Using your thumb or the back of a spoon, create a small indentation in the center of each cookie.
- Fill each indentation with salted caramel sauce.
- Bake for 12-15 minutes or until the edges are golden brown. The centers might look a bit undercooked, but they will firm up as they cool.
- Once baked, allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
Notes
For a gluten-free version, substitute all-purpose flour with gluten-free all-purpose flour. You can also add chocolate chips or nuts for variations.
