  • 2 lbs (about 8) chicken thighs, bone-in, skin-on or boneless, skinless
  • 3 medium ripe peaches (about 1 lb), pitted and sliced into 1/2-inch wedges
  • 1 cup BBQ sauce (smoky variety preferred)
  • 2 tbsp honey
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp olive oil
  • 1 small red onion, sliced (optional)
  • 12 sprigs fresh thyme or rosemary (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish with olive oil or nonstick spray.
  2. Wash, pit, and slice peaches into 1/2-inch wedges. If using canned peaches, drain and pat dry. Toss peach slices in a mixing bowl with 1 tbsp olive oil and a pinch of salt.
  3. Pat chicken thighs dry and season both sides with salt, pepper, smoked paprika, and garlic powder. Use half the spice mix on the chicken, reserving the rest for the sauce.
  4. Arrange seasoned chicken thighs in the baking dish, skin-side up if using skin-on. Nestle peach wedges and red onion slices (if using) around and under the chicken. Scatter thyme or rosemary sprigs on top.
  5. In a small bowl, whisk together BBQ sauce, honey, apple cider vinegar, and the remaining spice mix. Taste and adjust seasoning as desired.
  6. Spoon half the sauce over the chicken and peaches, covering evenly. Reserve the rest for basting midway through baking.
  7. Bake for 30 minutes. Remove from oven, baste chicken and peaches with the remaining sauce, and return to oven.
  8. Bake for an additional 15-20 minutes, until chicken registers 165°F and peaches are golden and bubbly. For extra char, broil for the last 2-3 minutes, watching closely.
  9. Remove from oven and let rest for 5-10 minutes before serving.
  10. Garnish with fresh herbs and extra BBQ sauce if desired. Serve hot, spooning roasted peaches and pan juices over each chicken piece.

Notes

Use bone-in thighs for juicier chicken. If peaches are overripe, reduce baking time by 5 minutes. Marinate chicken in BBQ sauce for 30 minutes before baking for extra flavor. Cover with foil if chicken browns too quickly. For a vegetarian version, substitute cauliflower steaks or chickpeas. Always check chicken doneness with a thermometer. Leftovers taste even better the next day and freeze well.
