This easy chicken bake combines juicy peaches, smoky BBQ sauce, and tender chicken thighs for a sweet and savory dinner that’s perfect for busy weeknights or casual gatherings. The peaches caramelize in the oven, infusing the chicken with moisture and flavor for a comforting, crowd-pleasing meal.
Ingredients
- 2 lbs (about 8) chicken thighs, bone-in, skin-on or boneless, skinless
- 3 medium ripe peaches (about 1 lb), pitted and sliced into 1/2-inch wedges
- 1 cup BBQ sauce (smoky variety preferred)
- 2 tbsp honey
- 1 tbsp apple cider vinegar
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp black pepper
- 1 tbsp olive oil
- 1 small red onion, sliced (optional)
- 1–2 sprigs fresh thyme or rosemary (optional)
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish with olive oil or nonstick spray.
- Wash, pit, and slice peaches into 1/2-inch wedges. If using canned peaches, drain and pat dry. Toss peach slices in a mixing bowl with 1 tbsp olive oil and a pinch of salt.
- Pat chicken thighs dry and season both sides with salt, pepper, smoked paprika, and garlic powder. Use half the spice mix on the chicken, reserving the rest for the sauce.
- Arrange seasoned chicken thighs in the baking dish, skin-side up if using skin-on. Nestle peach wedges and red onion slices (if using) around and under the chicken. Scatter thyme or rosemary sprigs on top.
- In a small bowl, whisk together BBQ sauce, honey, apple cider vinegar, and the remaining spice mix. Taste and adjust seasoning as desired.
- Spoon half the sauce over the chicken and peaches, covering evenly. Reserve the rest for basting midway through baking.
- Bake for 30 minutes. Remove from oven, baste chicken and peaches with the remaining sauce, and return to oven.
- Bake for an additional 15-20 minutes, until chicken registers 165°F and peaches are golden and bubbly. For extra char, broil for the last 2-3 minutes, watching closely.
- Remove from oven and let rest for 5-10 minutes before serving.
- Garnish with fresh herbs and extra BBQ sauce if desired. Serve hot, spooning roasted peaches and pan juices over each chicken piece.
Notes
Use bone-in thighs for juicier chicken. If peaches are overripe, reduce baking time by 5 minutes. Marinate chicken in BBQ sauce for 30 minutes before baking for extra flavor. Cover with foil if chicken browns too quickly. For a vegetarian version, substitute cauliflower steaks or chickpeas. Always check chicken doneness with a thermometer. Leftovers taste even better the next day and freeze well.
