Ingredients

Scale
  • 3 packs (3 oz each) ramen noodles (discard seasoning packets)
  • ¾ lb (12 oz) ground beef or Italian sausage
  • 2 cups marinara or pasta sauce
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Cheese Mixture:

  • 1 cup ricotta cheese (or cottage cheese)
  • 1 large egg
  • ½ cup grated Parmesan cheese

Topping:

  • 2 cups shredded mozzarella cheese
  • ¼ cup chopped fresh parsley (optional)

Instructions

  • Preheat oven to 375°F (190°C). Grease a 9×9-inch baking dish.
  • Cook ramen noodles in boiling water for 2 minutes (they should be slightly undercooked). Drain and set aside.
  • Prepare meat sauce: In a skillet over medium heat, cook ground beef until browned (about 5 minutes). Drain excess fat.
  • Add sauce & seasoning: Stir in marinara sauce, Italian seasoning, garlic powder, onion powder, salt, and pepper. Simmer for 5 minutes, then remove from heat.
  • Mix ricotta layer: In a bowl, combine ricotta cheese, egg, and Parmesan cheese until smooth.
  • Assemble layers:
    • Spread ⅓ of the meat sauce in the baking dish.
    • Layer half the ramen noodles evenly over the sauce.
    • Spread half the ricotta mixture on top.
    • Sprinkle with ⅓ of the shredded mozzarella.
    • Repeat layers, ending with remaining meat sauce and mozzarella cheese.
  • Bake for 25-30 minutes, or until cheese is melted and bubbly.
  • Let cool for 5 minutes, garnish with parsley, and serve!

  • Make Ahead: Assemble up to 24 hours in advance, refrigerate, then bake when ready.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.
