Ingredients

Scale
  • For the Casserole:

    • 4 cups shredded rotisserie chicken
    • 2 (10.5 oz) cans cream of chicken soup
    • ½ cup sour cream
    • ½ cup cream cheese, softened
    • 1 teaspoon garlic powder
    • ½ teaspoon onion powder
    • ½ teaspoon salt
    • ½ teaspoon black pepper
    • 1 cup shredded mozzarella cheese
    • 1 cup shredded Monterey Jack cheese
  • For the Topping:

    • 1 sleeve Ritz crackers, crushed
    • 4 tablespoons unsalted butter, melted
    • ¼ cup cooked bacon bits (optional)
    • 2 tablespoons chopped parsley (for garnish)

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  • Prepare the filling: In a large mixing bowl, combine shredded chicken, cream of chicken soup, sour cream, cream cheese, garlic powder, onion powder, salt, and black pepper. Stir until smooth and well-mixed.
  • Layer the casserole: Spread the chicken mixture evenly into the prepared baking dish. Sprinkle shredded mozzarella and Monterey Jack cheese over the top.
  • Make the topping: In a small bowl, mix crushed Ritz crackers with melted butter. Stir in bacon bits (if using).
  • Add the topping: Sprinkle the cracker mixture evenly over the casserole.
  • Bake: Place the dish in the oven and bake for 40-45 minutes, or until the top is golden brown and bubbly.
  • Garnish & serve: Sprinkle with chopped parsley before serving. Enjoy warm!

Notes

  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Freezing: Assemble the casserole (without the topping), cover tightly, and freeze for up to 2 months. Thaw overnight before baking.
  • Reheating: Bake at 350°F for 15-20 minutes, or microwave individual portions for 1-2 minutes.
  • Variations:
    • Add cooked pasta or rice to make it heartier.
    • Use Greek yogurt instead of sour cream for a lighter version.
    • Swap Ritz crackers for panko breadcrumbs for a crispier topping.
