- 2 cloves garlic, minced
- 1 (1 oz) packet taco seasoning (or homemade taco spice mix)
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (16 oz) jar salsa (mild, medium, or hot based on preference)
- 1 (10 oz) can diced tomatoes with green chilies (Rotel-style)
Layers:
- 10 small flour tortillas (or corn tortillas for a gluten-free option)
- 2 cups shredded Mexican cheese blend (cheddar, Monterey Jack, or queso quesadilla)
Toppings (Optional):
- ½ cup sour cream or Greek yogurt
- ¼ cup fresh cilantro, chopped
- 1 avocado, diced
- 1 jalapeño, sliced
- 1 lime, cut into wedges
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Cook the Meat: In a large skillet over medium heat, cook the ground beef until browned. Drain any excess grease. Add onion and garlic and cook for 2-3 minutes until fragrant.
- Season & Simmer: Stir in taco seasoning, black beans, corn, salsa, and diced tomatoes. Let simmer for 5 minutes to blend flavors.
- Layer the Lasagna: Place 3-4 tortillas at the bottom of the baking dish, overlapping as needed. Spread ⅓ of the meat mixture evenly, then sprinkle ⅓ of the cheese. Repeat layers twice more, finishing with cheese on top.
- Bake: Cover with foil and bake for 20 minutes. Remove foil and bake uncovered for 10 more minutes, or until the cheese is melted and bubbly.
- Cool & Serve: Let the lasagna sit for 5 minutes before slicing. Add sour cream, cilantro, avocado, jalapeños, and lime wedges for extra flavor.
