Description

Sticky, smoky, and sweet, these bite-sized party snacks feature little smokies sausages wrapped in crispy bacon and sprinkled with caramelized brown sugar. Quick to prepare and always a crowd-pleaser, they’re perfect for gatherings, game nights, or any festive occasion.

  • 1 package (14 oz) little smokies sausages (beef or pork)
  • 1 lb thin-cut bacon
  • 2/3 cup light brown sugar
  • 1/2 tsp smoked paprika (optional)
  • 1/4 tsp black pepper (optional)
  • 1/4 tsp chili powder (optional)
  • Fresh parsley, chopped (for garnish)
  • Toothpicks (for securing)

Instructions

  1. Preheat oven to 375°F (190°C). Line a rimmed baking sheet with parchment paper or foil. If using a wire rack, set it on top of the baking sheet.
  2. Cut each bacon slice into thirds (about 3-4 inches pieces).
  3. Wrap each little smokie sausage with a piece of bacon and secure with a toothpick. Repeat until all smokies are wrapped.
  4. Arrange bacon-wrapped smokies seam-side down on the wire rack or lined baking sheet, spaced apart for air circulation.
  5. In a small bowl, mix brown sugar with optional spices. Sprinkle liberally over each bacon-wrapped smokie.
  6. Bake for 18-22 minutes, until bacon is crispy and sugar is bubbling. Check at the 15-minute mark; if bacon isn’t crisping, increase oven to 400°F for the last few minutes.
  7. Remove from oven and let cool for 2-3 minutes so the sugar sets.
  8. Transfer to a platter, garnish with fresh parsley, and serve with extra toothpicks.

Notes

Thin-cut bacon crisps best. Don’t overcrowd the pan for maximum crunch. Use parchment paper for easy cleanup. Flip halfway for even crisping. Can be made ahead and refrigerated before baking. For gluten-free, double-check sausage and bacon labels. Air fryer option: cook at 375°F for 12-15 minutes in batches.
