  • ⅓ cup tahini (sesame paste)
  • ¼ cup fresh lemon juice (about 1 large lemon)
  • 3 tablespoons extra virgin olive oil
  • 23 cloves garlic, minced
  • ⅓ cup fresh parsley, finely chopped
  • 1 teaspoon fresh dill or mint, finely chopped (optional)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon ground cumin (optional)
  • 35 tablespoons water (adjust for desired consistency)

Instructions

  • Whisk Tahini & Lemon Juice: In a medium bowl, whisk together tahini and lemon juice until smooth and slightly thickened.
  • Incorporate Olive Oil: Slowly add the olive oil, whisking continuously to create a creamy consistency.
  • Add Garlic & Herbs: Stir in minced garlic, parsley, dill or mint, salt, pepper, and cumin.
  • Adjust Consistency: Add water, 1 tablespoon at a time, until the sauce reaches your desired thickness.
  • Taste & Adjust: Add more salt, lemon juice, or herbs if needed.
  • Serve or Store: Use immediately or store in an airtight container in the refrigerator for up to 1 week.

Notes

  • For a thicker dip: Use less water and add a little extra tahini.
  • For a thinner dressing: Add more water until pourable.
  • Serving Ideas: Drizzle over roasted vegetables, salads, falafel, grain bowls, or grilled meats.
