- 2 large yellow or sweet onions
- 1 cup grated parmesan cheese
- 2 large eggs, beaten
- 1 cup almond flour or crushed pork rinds
- Salt, to taste
- Black pepper, to taste
- Italian seasoning, optional
- Cooking oil spray
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and slice the onions into rings.
- Soak the onion rings in cold water for 10 minutes.
- Set up a dunking station with one bowl of beaten eggs and another with the parmesan and almond flour mixture.
- Dip each onion ring in the egg, then coat thoroughly with the cheese mixture.
- Arrange the coated rings in a single layer on a parchment-lined baking sheet.
- Lightly spray with cooking oil if desired.
- Bake for 20-25 minutes, or until crispy and golden.
- Let sit for 5 minutes before serving for optimal crunch.
