Ingredients

Instructions
- Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
- Melt 1/2 cup butterscotch chips in a microwave-safe bowl (about 30 seconds, stir until smooth). Let cool slightly.
- In a medium bowl, whisk together flour, cornstarch, baking soda, and salt.
- In a large bowl, beat softened butter, brown sugar, and granulated sugar until light and fluffy (2-3 minutes).
- Beat in eggs, one at a time, then add vanilla extract. Mix until fully combined.
- Pour in melted butterscotch chips and beat until smooth.
- Gradually add dry ingredients to wet ingredients, blending on low speed until just combined.
- Fold in 1 cup butterscotch chips and 1/2 cup white chocolate chips (if using) with a spatula.
- Scoop dough into 1.5 tablespoon balls and space 2 inches apart on baking sheets. Press extra chips on top if desired.
- Bake for 9-11 minutes, until edges are golden but centers look slightly underbaked.
- Drizzle with caramel sauce and sprinkle with flaky sea salt immediately after baking, if desired.
- Let cookies rest on the baking sheet for 5 minutes, then transfer to a wire rack to cool.
