- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup fresh strawberries, chopped
- Thick slices of white or brioche bread
- 2 eggs, beaten
- Flour for dusting
- Vegetable or canola oil for frying
Instructions
- In a mixing bowl, combine cream cheese, granulated sugar, and vanilla extract. Mix until smooth and creamy.
- Chop fresh strawberries and gently fold them into the cream cheese mixture. Set aside.
- Take two slices of bread and spread a generous amount of the cheesecake filling on one slice. Place another slice on top to create a sandwich. Repeat for remaining bread and filling.
- In a separate bowl, beat eggs with a splash of milk until well combined.
- Carefully dip each sandwich into the egg wash, allowing excess to drip off, and then lightly dust with flour.
- In a frying pan, add about 1-2 inches of oil and heat over medium heat until it reaches around 350°F (175°C).
- Once the oil is hot, carefully place the sandwiches into the oil, frying in batches if necessary. Fry for about 2-3 minutes on each side or until golden brown and crispy.
- Transfer the sandwiches to a plate lined with paper towels to absorb excess oil.
- Dust with powdered sugar and serve warm.
Notes
Keep an eye on the oil temperature to avoid burning. You can also bake the sandwiches at 375°F (190°C) for a lighter version.
