- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- Juice of 1 lime
- Salt and pepper to taste
- 2 ears of grilled corn (or canned)
- ¼ cup mayonnaise
- ¼ cup sour cream
- ½ cup crumbled cotija cheese (or feta)
- Juice of 1 lime
- ½ tsp chili powder
- ¼ tsp garlic powder
- 2 cups cooked rice (white, brown, or cauliflower)
- 1 can black beans, drained and rinsed
- 1 avocado, sliced
- ¼ cup chopped cilantro
- 1 tbsp hot sauce (optional)
- Lime wedges for serving
Instructions
- Heat olive oil in a pan over medium heat. Season chicken with chili powder, cumin, smoked paprika, salt, and pepper. Cook for 6-7 minutes per side until golden and cooked through. Let rest for 5 minutes, then slice.
- Grill corn for 3-4 minutes per side until charred, then slice off kernels. Mix with mayonnaise, sour cream, lime juice, cotija cheese, chili powder, and garlic powder.
- Build bowls: add rice, black beans, sliced chicken, and a generous scoop of street corn. Top with avocado, cilantro, and hot sauce if using. Serve with lime wedges.
Notes
For the best flavor, use grilled corn and marinate chicken if you have extra time. Customize with jalapeños or cayenne for more heat.
