- 1 cup glutinous rice flour (mochiko)
- ¾ cup sugar
- 1 cup water
- 2 tsp matcha powder (culinary grade)
- 2–3 tbsp warm water (for matcha paste)
- 1 tsp vanilla extract
- Parchment paper (for non-stick surface)
- Optional: pinch of baking soda for color
- Optional: simple syrup for glaze
Instructions
- Sift matcha powder into a small bowl to remove clumps. Whisk in warm water until a smooth paste forms. Set aside.
- In a mixing bowl, combine glutinous rice flour, sugar, and matcha paste. Gradually stir in 1 cup water and vanilla extract until smooth.
- Line a microwave-safe or steam-safe dish with parchment paper. Pour the mixture in and cover with plastic wrap or foil.
- Steam for 15–20 minutes or microwave in 1-minute intervals (about 3–4 minutes total), stirring gently between rounds, until firm and translucent.
- Let mochi rest for a few minutes, then turn out onto a cornstarch-dusted surface. Use a cookie scoop to portion into uniform bites.
- Lightly dust bites with more starch or brush with simple syrup for a glossy finish. Enjoy fresh or store in an airtight container.
Notes
Always use glutinous rice flour (not regular rice flour). For vibrant green color, avoid overcooking and use high-quality matcha. Parchment paper prevents sticking and keeps shapes neat.
