Instructions
Step 1: Prepare the Crust
- Preheat your oven to 325°F (163°C).
- In a medium bowl, mix graham cracker crumbs, sugar, and melted butter.
- Press the mixture firmly into the bottom of a 9-inch springform pan.
- Bake for 8-10 minutes, then let it cool while preparing the filling.
Step 2: Make the Cheesecake Filling
- In a large mixing bowl, beat the cream cheese and sugar until smooth.
- Add the eggs one at a time, beating just until combined.
- Mix in the sour cream and vanilla extract until fully incorporated.
- Pour the batter over the cooled crust and spread evenly.
Step 3: Bake the Cheesecake
- Bake at 325°F for 40-45 minutes, or until the center is slightly jiggly but set at the edges.
- Turn off the oven and let the cheesecake cool inside with the door slightly open for 1 hour to prevent cracking.
- Refrigerate for at least 4 hours (or overnight) before adding the topping.

- Once fully chilled, spread the cherry pie filling evenly over the cheesecake.
