- 3–4 medium apples (Granny Smith or Honeycrisp)
- 16 oz (450 g) cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups graham cracker crumbs
- ½ cup melted butter
- ¼ cup sugar
- 1 tablespoon lemon juice
- 1 teaspoon cinnamon
- Pinch of nutmeg
- 1 cup oats
- ½ cup flour
- ½ cup brown sugar
- ½ teaspoon cinnamon
- ½ cup cold butter
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until crumbly and press firmly into the bottom of your springform pan. Bake for 10 minutes, then remove and let cool.
- In a large bowl, beat softened cream cheese until smooth. Gradually add sugar and beat until creamy. Add eggs, one at a time, mixing well after each addition. Stir in vanilla extract.
- Peel, core, and slice the apples. Toss them with lemon juice, cinnamon, and a pinch of nutmeg.
- Pour half of the cream cheese mixture over the cooled crust, then layer in the apples. Top with the remaining cheesecake mixture and smooth out the top. Bake for 55-60 minutes or until the edges are set but the center is slightly jiggly.
- While the cheesecake is baking, mix oats, flour, brown sugar, cinnamon, and cold butter until crumbly. After the cheesecake bakes for about 45 minutes, sprinkle the topping over the cheesecake and bake for an additional 15 minutes. Let cool completely.
- Refrigerate for at least 4 hours or overnight. When ready to serve, run a knife around the edge and carefully release the springform. Slice and enjoy!
