Ingredients
- 6 medium apples (about 2 1/2 pounds), peeled, cored, and sliced (Granny Smith and Honeycrisp recommended)

- 1/2 cup granulated sugar
- 2 teaspoons ground cinnamon
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 2/3 cup milk (whole, 2%, or non-dairy)
- 1 teaspoon vanilla extract (optional)

Instructions
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, cornstarch, and a pinch of salt. Toss until apples are evenly coated. Let sit for 10 minutes.
- Pour the apple mixture into a greased 9×13-inch baking dish, spreading evenly.
- In a separate bowl, whisk together flour, granulated sugar, cinnamon, baking powder, and salt.
- Add cold, cubed butter and cut it in using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Stir in milk and vanilla extract until just combined. The dough will be thick but spreadable.
- Drop spoonfuls of dough over the apple mixture, covering as much as possible. Uneven dollops are fine.
- Bake uncovered for 40-45 minutes, until the topping is golden brown and the filling is bubbling. If the top browns too quickly, loosely cover with foil for the last 10 minutes.
- Check for doneness: topping should be firm and spring back lightly when touched, and juices should bubble up around the edges.
- Let the cobbler rest for at least 15 minutes before serving.
- Serve warm with vanilla ice cream or whipped cream, if desired.
Notes
Mix tart and sweet apples for best flavor. Use cold butter for a flaky topping. For gluten-free, use a 1:1 baking blend. If apples are watery, add extra cornstarch. Brush topping with melted butter for extra crispness. Cobbler can be assembled ahead and baked fresh. Leftovers freeze well and taste great reheated.
