- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup finely chopped fresh or crushed pineapple (drained)
- 1/2 cup chopped macadamia nuts (optional)
- 1/2 cup dried pineapple pieces (optional)
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt.
- In a large mixing bowl, cream the butter with powdered and granulated sugar until light and fluffy.
- Add vanilla extract and eggs, mixing until combined.
- Gradually mix in the dry ingredients until just combined.
- Fold in pineapple and optional nuts or dried fruit.
- Use a spoon or cookie scoop to drop dough onto prepared baking sheets.
- Bake for 10–12 minutes or until edges are lightly golden.
- Cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
Drain pineapple well to avoid excess moisture in the dough. Avoid overmixing to maintain a tender texture. Store cookies in an airtight container to keep them fresh.
