  • 1 cup honey
  • 1 cup granulated sugar
  • 1 cup unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 cup sour cream
  • 1 cup heavy cream
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (180°C). Grease your cake pans and set them aside.
  2. In a large mixing bowl, combine honey, granulated sugar, and softened unsalted butter. Mix until light and fluffy—about 3-5 minutes.
  3. Add eggs, one at a time, mixing well after each addition. Stir in vanilla extract.
  4. In another bowl, mix together flour, baking soda, and a pinch of salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with sour cream. Start and end with the flour mixture. Mix until just combined.
  6. Divide the batter evenly between the two prepared pans and smooth the tops with a spatula.
  7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the cakes to cool in the pans for about 10 minutes before transferring them to a cooling rack to cool completely.
  9. Prepare the frosting by beating together sour cream, heavy cream, and powdered sugar until soft peaks form.
  10. Once the cakes are completely cool, place one layer on a serving plate. Spread frosting on top, then place the second layer over it. Frost the top and sides of the cake.
  11. For decoration, crumble some of the leftover cake scraps and sprinkle them on top or use fresh berries or edible flowers.
  12. Allow your cake to chill in the fridge for at least 2 hours before serving.

Notes

Keep your pans well-greased for easy release. Don’t overmix your batter to avoid a dense cake.
