Ingredients
- 2 Fresh lemons (for zest and juice)
- 8 oz Cream cheese (softened)
- 1 cup Sugar
- 2 cups All-purpose flour
- 1/2 cup Butter (softened)
- 2 Eggs (room temperature)
- 1 tbsp Baking powder
- 1/2 tsp Salt
- 1 tsp Vanilla extract (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- Cream together the butter, softened cream cheese, and sugar until light and fluffy.
- Add eggs one at a time along with the vanilla extract.
- In another bowl, mix flour, baking powder, and salt.
- Add lemon zest and juice, then combine wet and dry ingredients, stirring gently.
- Pour the batter into the prepared pan.
- Bake for 45 to 55 minutes, checking with a toothpick for doneness.
- Cool on a rack before slicing.
Notes
Leftovers can be wrapped in foil or stored in an airtight container for up to 2 days at room temperature or up to a week in the fridge. For freezing, slice before storing.
